Being thankful

As autumn kicks into full swing, and with Thanksgiving just around the corner, we believe it is always a good time to count our blessings.

We are grateful for our family, the love that surrounds us, the roof over our heads and the food in our bellies. Knowing that not everyone is as fortunate as us in this regard is how Scary Mommy initially began their Thanksgiving Project three years ago. Since then they have adopted many families in need donating entire meals to help those families who for some reason or another cannot provide the meals many of us take for granted at the holidays.

Apple cake recipe

In honor of the beautiful fall weather rolling in and the holidays coming, we are sharing with you our favorite apple cake recipe. Happy fall and happy healthy new year to all!

Bon appétit!

Preheat oven to 350*

3 Cups pared/sliced apples (3 large apples) 

lemon juice squeezed over apples

5 Tablespoons granulated sugar

5 teaspoons cinnamon

combine apples, lemon juice, sugar and cinnamon and set aside

3 Cups flour

2 Cups granulated sugar

1 teaspoon salt

3 teaspoons baking powder

Mix flour, sugar, salt and baking powder 

pour in 1 Cup vegetable oil

4 eggs

1 Tablespoon vanilla

1/8 Cup orange juice

1/8 Cup lemon juice

Beat well

Grease bundt pan or lasagna pan well

For bundt pan: Pour in 1/3 wet mixture and spread evenly, add 1/2 apples as a layer, top with another 1/3 of flour mixture, another layer of apples and pour rest of flour mix on top evenly.

For lasagna pan: Pour in 1/2 wet flour mixture and spread evenly, add all apples as a layer, top with remaining flour mixture.

Bake for 1 - 1 1/4 hour until golden and crusty
